Major Objectives:

  • Physicochemical evaluation of SAs as emulsifiers/surfactants and comparison with commercial counterparts.
  • Evaluate ability of SAs to maintain low fat status without compromising quality of food products.
  • Evaluate ability of SAs to increase gelation and water holding capacity of protein gel in order to reduce amount of binder.
  • Evaluate anti-foaming effect of SAs for improving fermentation unit operations.
  • ¬†Evaluate anti-microbial activities of the SAs specific to niche applications.
