We produce an unrivalled range of ready-to-use culinary sweet and savoury sauces, desserts, fruit coulis, chilled, frozen and formed products as well as a selection of Bakery mixes, icings, fillings and frostings. All of our products are produced to the highest quality standards and deliver versatility, convenience and guaranteed consistency.
Key to addressing commercial pressures and enabling growth opportunities through product R&D is for Macphie to gain a better understanding of specific mechanisms which govern the performance of our product performance. This would allow optimisation of current products, including cost optimisation, and creation of new, better performing products. The former will help Macphie maintain current business and revenues from the existing portfolio of products and the latter will help Macphie gain new business. Macphie Research & Development are constantly reviewing new technologies to assess performance and potential benefits in our products.
Macphie Research and Development have access to Pilot scale UHT, Paste and Powder Plants which replicate processing on main plant.
Main tasks: Macphie specialise in developing and manufacturing premium quality food ingredients and solutions. The R&D Department are responsible for the development and testing of products to meet design criteria from which, are translated to scale up in the relative main production plants. Subsequent testing is coordinated by the R&D department ahead of field testing or release as standard product.
Description of supporting infrastructure
Macphie have Paste, Powder and UHT processing halls. Paste production makes use of a surface scrape Jacketed vessel manufacturing concentrated paste products for the manufacture of ferments (Breads/ rolls etc.) as well as confectionary toppings and fillings. The Powder facility manufactures mixes and concentrates for the manufacture of ferments, cakes and muffins as well as dusting and fillings. UHT plant manufactures aseptic Sweet and Savoury Sauces, Glazes, Dairy Cream Alternatives, Glazes and Desserts. The Glasgow site also manufactures meal components such as sauces, formed and extruded butters/ pellets.

Paul McKnight (Senior Research and Development Manager)
has been with Macphie of Glenbervie for over 10 years (BSc Consumer Product Management, Robert Gordon University). Mr McKnight leads a team of technologists working on R&D, NPD, Packaging, Processing, Co-Packing/ Manufacturing and Collaborative Projects where this project will be worked from.
Martin Ruck (Head of Research and Development)
has been with Macphie of Glenbervie for 1 year (BSc (Hons.) Biological Sciences with Industrial Biology, Warwick University). Mr Ruck has worked in the Bakery, Confectionery & Snacks industry for over 27 years, with various roles in R&D, Operations, Technical & Quality Assurance. Mr Ruck currently leads a team of twenty people across both manufacturing sites with responsibility for R&D, NPD, Packaging, Cost Optimisation, Processing, Co-Packing/ Manufacturing and Collaborative Projects where this project will be worked from. He currently sits on the Scottish Executive Common Interest Group for Reformulation as well the Interim Industry Task Team for the International Barley Hub (IBH) based at the James Hutton Institute.
